Eggplant Imam Bajalldi

It is the classic eggplant filling. Eggplant can be filled with meat or rice base. To reduce the amount of fat in this cooking, do not fry it, but marinate it and then put it in the oven for a few minutes while the filling is being prepared.


Ingredients:

Eggplant 200 gr

Onion 50 gr

Garlic 5 gr

Tomatoes 80 gr

Olive oil 20 ml

Parsley 5 gr

Oregano 3 gr

Vegetable oil (for redness)

Salt and pepper


Preparation:

Eggplants are cleaned, cut in half lengthwise and left in cold salted water for a few minutes. Meanwhile, prepare the sauce, cut the onions into slices, fry them together with the whole garlic, add the diced tomatoes, salt, spices and let them cook until they are ready. Meanwhile, fry the eggplants and arrange them in the pan, fill them and place a slice of tomato and mozzarella on them. Finally we put them in the oven.


This dish can be served cold or hot.
